WINEMAKING NOTES The essential element in the making of Centurion is the critical quality selection of the fruit from the 1892 plantings. All of the fermentations were carried out in small static fermenters with pump-overs three-six times a day or in hand plunged 600 kg fermenters in which trials of whole bunch and whole berry fermentations were undertaken. Following gentle pressing, free run and pressings were matured separately in French oak, with two workings to soften and mature the wine. From these components the final blend was assembled. All handling of this wine during its maturation was done without pumping. A major emphasis is in the promotion of long silky tannins on the palate and a lively fruit that will mature elegantly over a long period. The wine was bottled in July 2013.
VINTAGE CONDITIONS 2013 had a very dry lead up to vintage with very little rainfall from December. Crops were again low and with the warm conditions leading into harvest, picking was early. We have seen excellent intensity in red wines with long, but soft tannins and great varietal typicity.
OAK TREATMENT Initially 40% New French, then matured in 45% 1 year old balance in well seasoned barrels for 16 months
